Mairi’s Kitchen: Easter Baking With The “Friend”
This past Easter weekend called for lots of baking!
I bake from time to time, but I am certainly not a highly skilled baker.
Still, I tried out some of the recipes from our Easter Cookery pages.
Easter Mocha Fudge Cake
First up was the Easter Mocha Fudge cake from arcticicedcoffee.co.uk.
My cake might not look exactly like the one pictured in the “Friend”, but it was easy to make and tasted great.

Some things I would change
If I made this cake again, I would do a few things differently.
When mixing the self-raising flour and muscovado sugar for the sponge, I would use a handheld mixer to get rid of lumps.
When making the icing, I would add the dark chocolate in with the iced coffee and cream while on the heat to allow it to melt better. Our icing was a little lumpy.
This cake is perfect for Easter. It was very sweet, but the icing was to die for.
Melting Creme Egg Chocolate Puddings
Because one dessert isn’t enough . . . next up was these Melting Creme Egg Chocolate Puddings from www.fairburnseggs.co.uk.
This dessert was really easy to make. I made the mixture while our main meal was cooking, which took about ten minutes.
I then prepped the ramekins to serve the puddings in, greasing them with butter and adding a little cocoa powder to the bottom.
About 30 minutes before you want to serve, spoon the mixture into the ramekins and drop in the creme eggs.
Bake for 15 minutes and voila! These had a perfectly baked top with a melting middle.
